Some prepared horseradish is “extra hot.” Unless you really love your horseradish sauce accompanied by watery eyes, you’ll want to avoid the extra hot prepared horseradish for this sauce.

Tightly covered horseradish sauce should last 5 to 6 days in the refrigerator. The chives in this particular sauce are what give it a shorter refrigerator life. If you leave the chopped chives out and add them just as you’re about to serve, it will last 2 to 3 weeks in the refrigerator.
